Method

  1. Dissolve the sugar in the cup of hot water, stirring with a spoon until it disappears completely and the syrup is clear, then leave to cool for about 10 minutes so the heat does not spoil the scent of the orange blossom water.

  2. Pour the sugar syrup into a large jug, add the cold water and lemon juice and stir well until the sweetness and light tartness are balanced.

  3. Add the orange blossom water one spoonful at a time, tasting as you go: you want a clear, refreshing blossom aroma without the floral note overpowering the drink. Then sprinkle in the cinnamon, if using, and stir to distribute.

  4. Cover the jug and refrigerate for at least 1 hour until well chilled and the flavours have blended; stir once before serving, as the cinnamon may settle at the bottom.

  5. Serve the cherbet in glasses with ice cubes and mint leaves or a slice of lemon; it is a traditional welcome drink at weddings, Ramadan evenings and the bride's hammam party, especially renowned in Blida and the towns of central Algeria.
