Method
Chill the milk and fruit first, then open the ripe avocados, scoop out the creamy green flesh and put it in the blender with the dates, milk and a few nuts.
Blend until thick and velvety; you’ll notice the sound of the blender gradually soften as the pieces turn into a smooth, pale green cream. Taste for sweetness before adding any honey.
Cut the banana and whatever fruit you have into small cubes and divide some of it among the bottoms of the glasses with a few almonds or walnuts and raisins; in some versions a thin layer of custard or flan is spread on top.
Slowly pour the cold avocado mixture over the fruit layers, then decorate the top with nuts and a drizzle of honey or chocolate, or biscuit crumbs; the idea is to keep it very thick, halfway between a dessert eaten with a spoon and a drink.
Serve cold straight away, before the avocado oxidises and changes colour; zaazaa is a Moroccan drink well known in juice bars, which some sources say is especially famous in Tetouan, and it is served as both a refreshment and a rich dessert, not tied to any particular occasion.
