Method
Make the almond filling by mixing the ground almonds with the sugar, orange blossom water and cinnamon until you have a soft, cohesive paste.
Shape the almond filling into thin, curved fingers in the form of a crescent horn.
Make a very thin outer dough with the flour, smen and water, and carefully wrap the almond fingers in it until fully covered without breaking them.
Deep-fry the filled pieces until lightly golden on all sides, or bake them in a moderate oven if you prefer.
Dip the hot pieces straight into the cold syrup for a few seconds, then lift out and sprinkle with toasted sesame. These crescent-shaped sweets are among the best known in southern Tunisia, especially Tataouine governorate, and go by many local names, including “mahchi Tataouine”.
