Method

  1. Prepare the meat: cut the chicken breast, meat or merguez into thin strips and season with salt, pepper and the mixed spices, then grill or pan-fry in a little oil until cooked and golden.

  2. Melt the cheese: put the grated cheese directly on the hot meat in the pan and cover for 1 minute until it melts completely and coats the meat in a creamy, tempting layer.

  3. Make the sauces: mix a white sauce of mayonnaise boosted with garlic and herbs, a red sauce of harissa or hot ketchup, and a light dressing of vinegar, oil and mustard.

  4. Assemble the tacos: lay out the round flatbread, add a layer of fries, then the cheese-covered meat, followed by the fried egg if using, the fresh vegetables and the pickles.

  5. Close and serve: pour the three sauces generously over the filling, then fold the flatbread or roll it up tightly, and serve the tacos hot straight away, sometimes with extra sauce for dipping. In recent years Algerian tacos have taken over food trucks and fast-food outlets in every Algerian city, becoming the favourite companion for evenings out with friends, a modern blend of hot local flavours and global fast-food culture.
