Method

  1. Make a soft bread dough and roll it out into a thin round of medium thickness.

  2. Cook the meat (shawarma or seasoned mince) on a griddle or in a frying pan until fully cooked and lightly browned.

  3. Spread a layer of cheese in the centre of the dough, then add the cooked meat on top.

  4. Fold the edges of the dough towards the centre to cover the filling completely, forming a closed square or rectangle (the makloub), then cook the folded parcel on the hot griddle on both sides until the dough is golden and the cheese has fully melted inside.

  5. Cut the makloub and serve hot with the mayonnaise, hot sauce and pickles on the side. This folded sandwich has become one of Tunisia’s most popular modern street foods, sold in most snack bars and fast-food shops.
