Method
In a large bowl, mix the flour with the instant yeast, sugar and salt, then add the lukewarm water gradually, stirring constantly, until you have a very soft dough closer to a thick, runny batter.
Cover the dough with a clean cloth and leave it to rise in a warm place for 1 to 1½ hours, until doubled in size and full of air bubbles.
Heat plenty of oil in a deep pot over medium heat; wet your hand to stop the dough sticking, take some dough and shape it in your palm into a ring or a disc with a hole in the middle, then drop it straight into the hot oil.
Fry the bambalouni until golden and crisp outside and soft and spongy inside, turning only once, then lift out onto kitchen paper to drain the excess oil.
Sprinkle each one generously with sugar and serve hot straight away. Bambalouni is the popular treat whose name is tied to the seaside cafés of Sidi Bou Said, where tourists and Tunisians flock to the little carts in the blue-and-white lanes to enjoy these crisp golden rings with a glass of mint tea on an unforgettable summer evening.
