Method
Cut the potatoes into thick chips and give them a first fry in medium-hot oil until cooked through but not deeply coloured.
Lift the chips out and let them rest for a few minutes, then return them to very hot oil for a quick second fry until golden and extra crisp.
Make the brown gravy by cooking halal beef or chicken stock with a little toasted flour to thicken it, without adding any alcohol.
Drain the twice-fried chips well and spread them in a deep serving dish.
Scatter the fresh cheese curds generously over the hot chips and pour the hot gravy straight over everything so the cheese starts to melt without melting completely. Serve immediately. Poutine is Canada’s best-known national dish; born in rural Quebec in the 1960s, it has become a symbol of all Canadian cuisine.
